Mullu Murukku, also known as Mullu Thenkuzhal or Mullu Murukku, is a traditional South Indian snack known for its distinctive spiral shape and crispy texture. It’s a popular snack enjoyed during festivals, celebrations, and as a teatime treat.
To make Mullu Murukku, a dough is prepared by mixing rice flour, urad dal flour (black gram flour), salt, and water. Sometimes, additional ingredients like sesame seeds, cumin seeds, asafoetida, and butter or ghee are also added to enhance the flavor and texture.
The dough is then shaped using a special Murukku press or mold with a star-shaped disc. The dough is extruded through the mold in a circular motion, creating spiral shapes that are then deep-fried until golden brown and crispy.
