Description
Ellu Podi, also known as Sesame Seed Powder or Sesame Seed Chutney Powder, is a flavorful South Indian condiment made from roasted sesame seeds and spices. It is commonly served as a side dish or accompaniment to various South Indian dishes.
To prepare Ellu Podi, sesame seeds are dry roasted until they turn golden brown and release their nutty aroma. Other ingredients such as dried red chilies, urad dal (black gram dal), chana dal (split chickpeas), cumin seeds, coriander seeds, and asafoetida are also dry roasted until they are fragrant and lightly browned.
Once roasted, the sesame seeds and spices are allowed to cool before being ground into a coarse or fine powder using a spice grinder or mortar and pestle. Salt may be added to taste during the grinding process.
The resulting Ellu Podi is a flavorful and aromatic powder with a rich, nutty taste from the sesame seeds and a hint of spiciness from the dried red chilies. It can be served as a condiment alongside rice, idli, dosa, or other South Indian dishes. Ellu Podi can also be mixed with ghee or oil and used as a dip for dosas or spread on toasted bread for a tasty snack.
This versatile condiment adds depth and complexity to dishes with its unique flavor profile, making it a popular choice in South Indian cuisine
