Kai Murukku, also known as “Hand Murukku” or “Hand-Pressed Murukku,” is a traditional South Indian snack made from rice flour and urad dal flour (black gram flour). It’s called “Kai” (meaning hand in Tamil) because of its unique preparation method where the dough is hand-pressed into intricate patterns before frying.

To make Kai Murukku, a dough is prepared by mixing rice flour, urad dal flour, salt, cumin seeds, sesame seeds, asafoetida, and sometimes butter or ghee. Water is added gradually to form a smooth and pliable dough.

The dough is then divided into small portions, and each portion is rolled into a rope-like shape. These ropes of dough are then twisted and hand-pressed into circular or spiral shapes directly into hot oil for frying.

The hand-pressed Murukku is deep-fried until golden brown and crispy. The end result is a crunchy and flavorful snack with a unique texture and shape.
