Kara Sev, also known as Spicy Sev, is a popular South Indian snack made from chickpea flour (besan) and seasoned with various spices. It’s characterized by its thin, crispy texture and spicy flavor.

To make Kara Sev, a batter is prepared using chickpea flour, rice flour, water, and spices like chili powder, turmeric, asafoetida, and salt. This batter is then passed through a Sev maker or a special press with a fine-holed disc directly into hot oil. As the batter is extruded into the hot oil, it forms thin strands or noodles, which are deep-fried until golden brown and crispy.

Once fried, Kara Sev is drained of excess oil and allowed to cool. It can be stored in an airtight container for several days. Kara Sev is commonly enjoyed as a snack on its own or used as a topping for various chaat dishes or served alongside other savory snacks.
