Poondu Paruppu Podi, also known as Garlic Lentil Powder, is a flavorful South Indian spice blend made primarily from garlic and lentils. It is commonly used as a condiment or seasoning to enhance the flavor of various dishes, especially rice-based meals.

To prepare Poondu Paruppu Podi, garlic cloves are peeled and sautéed in a little oil until they turn golden brown and aromatic. Additionally, lentils such as urad dal (black gram dal) and chana dal (split chickpeas) are dry roasted until they become fragrant and lightly browned. Other spices like dried red chilies, coriander seeds, cumin seeds, and asafoetida may also be added and roasted along with the lentils.
