Thinai Seedai is a variation of the traditional Seedai snack made using Thinai flour, which is also known as Foxtail Millet flour. Seedai is a popular South Indian snack typically made during festivals like Krishna Jayanthi (Janmashtami).

To prepare Thinai Seedai, Thinai flour is mixed with rice flour, urad dal flour (black gram flour), grated coconut, sesame seeds, cumin seeds, asafoetida, salt, and sometimes spices like red chili powder. Water is added gradually to the mixture to form a stiff dough.

Small portions of the dough are then shaped into tiny balls or cylinders by rolling them between the palms of the hands. These shaped dough balls are then deep-fried in hot oil until they turn golden brown and crispy.

Once fried, Thinai Seedai is drained on paper towels to remove excess oil and allowed to cool. The end result is a crunchy and flavorful snack that’s perfect for munching on its own or serving as a festive treat during special occasions.
