Ulundhu Murukku, also known as Urad Dal Murukku, is a savory South Indian snack made primarily from urad dal (black gram dal or urad dal flour) and rice flour. It’s a variation of the traditional Murukku, a popular snack enjoyed during festivals and special occasions.
To prepare Ulundhu Murukku, urad dal is soaked for a few hours and then ground into a fine paste. This paste is mixed with rice flour and seasoned with spices like salt, chili powder, asafoetida, cumin seeds, and sometimes sesame seeds or ajwain (carom seeds) for additional flavor.
The dough is kneaded well to ensure a smooth consistency. Then, small portions of the dough are taken and shaped into spiral or coil shapes using a murukku press or extruder.
The shaped dough spirals are then deep-fried in hot oil until they turn golden brown and crispy. Once fried, Ulundhu Murukku is drained on paper towels to remove excess oil and allowed to cool.
The end result is a crunchy and flavorful snack with a unique texture and taste. Ulundhu Murukku is enjoyed as a teatime snack or as part of festive snack platters. Its savory flavor and satisfying crunch make it a favorite among snack enthusiasts of all ages
